Plan it out
3 days ahead
make cranberry sauce
cube sandwich loaf for stuffing
2 days ahead
defrost turkey from freezer and put into fridge
last minute ingredient check
1 day ahead
prep vegetables; peel, chop etc.
make flour mixes
leave out cubed bread to get stale for stuffing
pull out pans needed for next day
make desserts
Day of Feast
Make the stuffing, stuff bird and put the turkey in a 325 oven.
2 hrs before
Green beans need oven time, so get those ready to go when you take the turkey out
Cook mashed cauli-pots
Start vegetable steamer
1 hr before
take turkey out, start gravy
cook beans in the oven
make creamed spinach, then yorkshire puddings.

I’m a total sucker for an easy meal. And gluten-free pasta varieties have increased so much in the last couple years, nobody is the wiser.

Shepherd’s Pie
This is my favourite comfort food no matter what time of year. I like to use lentils and mushrooms to keep it vegan, but it’s also a great dish to make out of left overs.
Use up your mashed cauli-pots and any leftover dark turkey meat and steamed vegetables from the main event.

Low and slow is always the best with birds, right? I cook at 325 and it’s an all day event. I coat it in butter, fresh herbs and s+p.
Make sure you stuff the bird and place rough chopped onion, celery & carrot in the pan to make the tastiest gravy. Trust me on this one, it may look like a lot going on in the pan, but it’s a good thing.
